Favorite cake of some of the Grandkids. This is also a cake popular during the depression, and does not require eggs
Crazy Cake
Favorite cake of some of the Grandkids. This is also a cake popular during the depression, and does not require eggs
Ingredients
- 3 cups all-purpose flour
- 2 cups white sugar
- 1 tsp salt
- 2 tsp baking soda
- ½ cup unsweetened cocoa powder
- ¾ cup vegetable oil
- 2 tbls distilled white vinegar
- 2 tsp vanilla extract
- 2 cups cold water
Frosting
- ⅓ cup soft or melted butter
- 3 cups powdered sugar
- 3 tbls (about) cream or milk
- 1½ tsp vanilla
Instructions
- Sift flour, sugar, salt, soda and cocoa together into a 9×13" ungreased cake pan. Make 3 wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork until completely mixed.
- Bake at 350° F for 30 to 40 minutes, or until tooth pick inserted comes out clean.
- Frost with your favorite icing, or the below
- Frosting: Whip frosting ingredients together until smooth
Notes
You can vary the frosting by adding melted chocolate, instant coffee for a mocha flavor or sometimes I melt brown sugar in the butter before adding to the powdered sugar. Walnuts are good either mixed in cake or sprinkled on top.
