Poverty Cake
This is Grandma Mary Carter's recipe which was popular during the depression era probably because it doesn't require eggs and milk. Grandma Mary would use it to make fruit cake by adding fruit cake mix. It is good just as is with whipping cream or a butter cream frosting.
Ingredients
- 1 lb raisins
- 1 cup butter or lard
- 2 cups hot water
- 2 cups sugar
- 4 cups flour
- 2 tsp baking soda
- 1 tsp ground cloves
- 1 tsp cinnamon
Instructions
- Mix raisins, lard, spices and sugar
- Add water, let come to a boil
- Add soda dissolved in a little warm water.
- Add flour and mix
- Bake in cake pan for 1 hour at 350 degrees. I recommend greasing and flouring cake pan. Other fruits, such as apples can be added. Walnuts work well.
