Super Delish Broccoli Salad

Super Delish Broccoli Salad
This is one of those dishes that everyone always loves and wants the recipe for. I brought it one time for Chrismas dinner at the Fort Collins Long's.Note that the dressing needs to chill one hour before using, so plan ahead. I didn't when I made this the other night for the photo, so you can't really see much of the dressing ~
Ingredients
- ½ lb bacon, cooked and crumbled
- 5-6 cups bit-sized broccoli florets
- 1 cup mayo
- 1 Tbsp cider vinegar
- ⅓ cup chopped onion
- Up to ¼ cup sugar adjust depending on desired sweetness; I use a lot less
- ¾ cup craisins original recipe called for raisins, but blech IMHO
- ½ cup sunflower seeds, better if toasted
- dash salt
Instructions
- Bring a large pan of salted water to a boil
- Add the broccoli and blanch until bright green and slightly softened, about 3 minutes
- Drain well using colandar, then run cold water over colandar to stop the broccoli from cooking
- Combine the mayonnaise, vinegar, onion, sugar, and craisins in a mixing bowl
- Add the broccoli and toss to coat with the dressing
- Refrigerate for 1 hour +/-
- Just before serving, fold in the sunflower kernels and all but 2 Tbsp of the crumbled bacon
- Sprinkle the reserved bacon over the top and serve immediately
Notes
I actually use 1:1 Monk fruit sweetener instead of white sugar.
Used almonds for the dish in the photo, which worked fine too.
