Pumpkin Spice Date Truffles
This is a raw, vegan, gluten free snack or dessert that I obsess about when holiday season comes along. It satisfies your sweet tooth while still staying healthy!
Ingredients
- ½ cup pitted dates
- 1⅓ tsp organic pumpkin spice
- 2 Tbsp liquid coconut oil
- ½ cup almond flour
- ¼ cup coconut flakes (I like the shorter shredded kind)
- ¼ tsp sea salt
- ½ tsp stevia
Instructions
- You can either blend with food processor or use mortar and pestle.
- Mash the dates until they are almost a paste consistency.
- Gather the rest of your ingredients and add them into the food processor and blend until smooth.
- If you aren't using the food processor, roll up your sleeves, add all ingredients into a large bowl and massage them together until thoroughly mixed
- Once everything is mixed together, take a small amount of the mixture and roll it into a ball between your palms
- Place on a plate or a sheet pan with parchment paper
- Chill them in the fridge for a few hours and enjoy!
