Pumpkin Spice Date Truffles

This is a raw, vegan, gluten free snack or dessert that I obsess about when holiday season comes along. It satisfies your sweet tooth while still staying healthy!
- ½ cup pitted dates
- 1⅓ tsp organic pumpkin spice
- 2 Tbsp liquid coconut oil
- ½ cup almond flour
- ¼ cup coconut flakes (I like the shorter shredded kind)
- ¼ tsp sea salt
- ½ tsp stevia
You can either blend with food processor or use mortar and pestle.
Mash the dates until they are almost a paste consistency.
Gather the rest of your ingredients and add them into the food processor and blend until smooth.
If you aren't using the food processor, roll up your sleeves, add all ingredients into a large bowl and massage them together until thoroughly mixed
Once everything is mixed together, take a small amount of the mixture and roll it into a ball between your palms
Place on a plate or a sheet pan with parchment paper
Chill them in the fridge for a few hours and enjoy!
