Pancakes (from scratch!)
This is a comfort food, better than any mix. My mom, LaVille (Henjum) Larson, grew up on a farm near Hoffman, Minnesota, with five siblings. Her mother, Irene (Urbatch) Henjum, would make piles of pancakes for large groups of relatives. If any were left over, we would toss them to the barn cats. I enjoy the blueberry version, and buttermilk makes them extra special.
Ingredients
- 2 eggs
- 2 cups milk
- 1 tsp vanilla
- 2 tbsp sugar (can be omitted)
- 4 level tsp baking powder
- dash of salt
Instructions
- Don't over-beat or it gets tough. Can add blueberries or sliced apple. If you substitute buttermilk for milk, add 1 tsp baking soda.
