“Cheater” Beef Stroganoff

“Cheater” Beef Stroganoff
We always loved beef stroganoff, but the traditional recipe is a bit of an effort and expensive. Found this cheater recipe years ago, and it immediately became a hit with the family. Super easy and delicious! I tweaked the original recipe over the years to make it a bit less "goopy".
Ingredients
- 1 lb ground beef
- 1 packet dry brown gravy mix
- 8 oz package cream cheese at room temperature
- 6 oz can chopped mushrooms probably could easily use fresh mushrooms instead
- ½ cup milk
- 8 oz container sour cream
- 1½ can cream of mushroom soup original recipe called for 2 cans, but I find that's a bit much and I'd rather have the taste of sour cream and cream cheese come through
Instructions
- Cook the noodles in a large pot of lightly salted water until al dente (8-10 minutes), drain
- Brown the ground beef and drain the fat (feel free to add chopped onions and garlic)
- Mix the brown gravy mix, cream cheese, and mushrooms with the hamburger, stirring until the cream cheese melts in
- Add milk, sour cream, and mushroom soup. Heat through.
- Add to noodles to achieve the desired thickness/sauciness
Notes
You can add a bit of ketchup if desired for some “zing”, according to Gillian.
