Joel’s Special Fettucini Alfredo
I just woke up with a vision and developed it.
Ingredients
- 1 lbl fresh or dry fettucini
- ½ cup butter
- 1 cup heavy cream
- 1 cup parmesan reggiano (grated)
- 1 red bell pepper sliced 2"
- ½ onion sliced
- 1 cup sliced mushrooms (Shitake mushrooms work beautifully)
- ¼ lbl prosciutto
Instructions
- Saute vegetables in 1 tbls olive oil until tender and the onion is translucent. Salt & pepper to taste
- While vegetables are cooking, boil water in large pot – add 1 tbls salt. add pasta and cook for about 10 minutes
- Melt ½ cup butter. remove from heat and add cream and Parmesan cheese – stir until cheese is incorporated. add salt & pepper to taste
- Drain pasta and stir into the sauce
- Serve on individual plates with vegetables placed on top
- Tear prosciutto and place on top
- Pull fettuccine thru mixture to warm
- Shave additional Parmesan on top
