Joel’s Special Fettucini Alfredo

I just woke up with a vision and developed it.
Course Not Dinner

Ingredients
  

  • 1 lbl fresh or dry fettucini
  • ½ cup butter
  • 1 cup heavy cream
  • 1 cup parmesan reggiano (grated)
  • 1 red bell pepper sliced 2"
  • ½ onion sliced
  • 1 cup sliced mushrooms (Shitake mushrooms work beautifully)
  • ¼ lbl prosciutto

Instructions
 

  • Saute vegetables in 1 tbls olive oil until tender and the onion is translucent. Salt & pepper to taste
  • While vegetables are cooking, boil water in large pot – add 1 tbls salt. add pasta and cook for about 10 minutes
  • Melt ½ cup butter. remove from heat and add cream and Parmesan cheese – stir until cheese is incorporated. add salt & pepper to taste
  • Drain pasta and stir into the sauce
  • Serve on individual plates with vegetables placed on top
  • Tear prosciutto and place on top
  • Pull fettuccine thru mixture to warm
  • Shave additional Parmesan on top
