Saute vegetables in 1 tbls olive oil until tender and the onion is translucent. Salt & pepper to taste
While vegetables are cooking, boil water in large pot – add 1 tbls salt. add pasta and cook for about 10 minutes
Melt ½ cup butter. remove from heat and add cream and Parmesan cheese – stir until cheese is incorporated. add salt & pepper to taste
Drain pasta and stir into the sauce
Serve on individual plates with vegetables placed on top
Tear prosciutto and place on top
Pull fettuccine thru mixture to warm
Shave additional Parmesan on top
