This is s Scandanavian treat that the Larsons and Henjums enjoyed every Christmastime. It's quite a project to make, but worth it! You can involve the children in the process, as we often did at home in Bozeman or on the family farms back in Minnesota. This particular recipe comes from Mrs. Jensvold, whose cooking was legendary and whose farmhouse was overflowing with "cute" crafts. Lefse is like a tortilla made of mashed potatoes, usually served rolled up with brown or white sugar and butter. Old timers would scoop up their lutefisk with it. But we won't go there.

Ingredients
  

  • 3 mashed potatoes
  • ¼ cup cream or condensed milk
  • ½ tsp salt
  • 1 Tbsp melted butter
  • 1 tsp sugar
  • 1 cup flour

Instructions
 

  • After potatoes are well mashed, add all ingredients except flour. Cook well.
  • Add flour
  • Roll potatoes into a roll and slice off small pieces for rolling on a well-floured cloth
  • Bake on a lg. flat griddle
  • Turn when brown spots begin to appear

Notes

Don’t forget to enjoy lefse with brown sugar and butter!
