Pappardelle With Peas & Parmesan

Pappardelle With Peas & Parmesan
We love this recipe. It's quick, easy, healthy and delicious.
Ingredients
- 1 lb Pappardelle or Fettuccine
- ⅓ c + 1 tbsp Olive oil
- 1 cup chopped onion
- 2 tbsp sugar
- ¼ tsp pepper
- 2 cups peas
- 1/2 cup chicken broth
- 1 tbsp butter
- 12 mint leaves for garnish
- fresh grated parmesan for garnish
- 1 cup peas for garnish
Instructions
- Boil water and cook pasta
- Meanwhile, saute onion, sugar, salt, pepper in butter about 5 minutes
- Add 2 C peas and cook until peas are fully cooked
- Transfer to food processor or blender and puree with broth and olive oil
- Gently fold the pureed peas with the pasta
- Serve and top with mint, cheese and peas
