Pappardelle With Peas & Parmesan

We love this recipe. It's quick, easy, healthy and delicious.

Ingredients
  

  • 1 lb Pappardelle or Fettuccine
  • c + 1 tbsp Olive oil
  • 1 cup chopped onion
  • 2 tbsp sugar
  • ¼ tsp pepper
  • 2 cups peas
  • 1/2 cup chicken broth
  • 1 tbsp butter
  • 12 mint leaves for garnish
  • fresh grated parmesan for garnish
  • 1 cup peas for garnish

Instructions
 

  • Boil water and cook pasta
  • Meanwhile, saute onion, sugar, salt, pepper in butter about 5 minutes
  • Add 2 C peas and cook until peas are fully cooked
  • Transfer to food processor or blender and puree with broth and olive oil
  • Gently fold the pureed peas with the pasta
  • Serve and top with mint, cheese and peas
