Pappardelle With Peas & Parmesan

We love this recipe. It's quick, easy, healthy and delicious.
- 1 lb Pappardelle or Fettuccine
- ⅓ c + 1 tbsp Olive oil
- 1 cup chopped onion
- 2 tbsp sugar
- ¼ tsp pepper
- 2 cups peas
- 1/2 cup chicken broth
- 1 tbsp butter
- 12 mint leaves for garnish
- fresh grated parmesan for garnish
- 1 cup peas for garnish
Boil water and cook pasta
Meanwhile, saute onion, sugar, salt, pepper in butter about 5 minutes
Add 2 C peas and cook until peas are fully cooked
Transfer to food processor or blender and puree with broth and olive oil
Gently fold the pureed peas with the pasta
Serve and top with mint, cheese and peas
