Sugar Cookies with Cream Cheese Frosting

I learned to make these cookies in high school when I worked at a small chocolate shop in Salt Lake City. I've made them almost every Christmas since. Many have said they are the "best cookie they've ever had." The combination of the tart cream cheese frosting and the extra soft cookie makes these surefire hit.

Ingredients
  

Cookies

  • cups cake flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 cup softened butter
  • 1 cup sugar
  • ½ cup powdered sugar
  • 1 egg
  • 1 tsp vanilla extract
  • pinch of salt

Frosting

  • 4 oz butter
  • 4 oz cream cheese
  • 2 cups powdered sugar

Instructions
 

Cookies

  • Mix all dry ingredients in a separate mixing bowl, set aside.
  • Using a mixer, beat together the sugar and butter until completely smooth.
  • Beat in the egg and vanilla.
  • Slowly start to add all of the dry ingredients until fully mixed.
  • roll out dough on parchment paper to about 1/4 inch thick and place in the refrigerator for 2 hours or up to 2 days. While they are chilling you can prepare the frosting.
  • When the dough is fully chilled, start cutting your desired shape with a cookie cutter or jar lid.
  • Bake at 350 for 7-9 minutes, until the cookies are still slightly shiny. If the edges are golden, you've baked too long.
  • Let cool before adding frosting.

Frosting

  • Beat together cream cheese and butter.
  • Slowly mix in the powdered sugar.
  • Mix in the vanilla extract.
  • You can add whatever color food dye you like. My favorite way to decorate is to pipe it through pastry bag and the star icing tip to create little stars. The more frosting , the better. I usually make a double batch of the frosting so I have more than enough to make different colors.
