Mix all dry ingredients in a separate mixing bowl, set aside.
Using a mixer, beat together the sugar and butter until completely smooth.
Beat in the egg and vanilla.
Slowly start to add all of the dry ingredients until fully mixed.
roll out dough on parchment paper to about 1/4 inch thick and place in the refrigerator for 2 hours or up to 2 days. While they are chilling you can prepare the frosting.
When the dough is fully chilled, start cutting your desired shape with a cookie cutter or jar lid.
Bake at 350 for 7-9 minutes, until the cookies are still slightly shiny. If the edges are golden, you've baked too long.
Let cool before adding frosting.
